The loveliest wine name of Beaujolais (some will even say of France) is certainly Saint-Amour, at the northern end of the Beaujolais Hills. Here, the vines, pruned very short in the "gobelet" shape, climb the steep slopes of pink granite. At harvest time, the grapes are always hand-picked to avoid bruising. The alcoholic fermentation takes 8 to 10 days and involves such traditional methods as punching down the cap and pumping over the juice. During the Winter, the malolactic fermentation further reduces the acidity level. But the wine still needs 7 to 8 months of ageing for the lees to be eliminated and the wine completely ready. Saint-Amour has the most beautiful purple colour. A profound aroma of violet and musk is very distinctive. Round and supple, the wine ends on a long, fruity aftertaste. Served slightly cool, Saint-Amour is a very versatile wine : it can be served in any season of the year, at the beginning of a meal, as well as at the end. Its friendly nature makes it the favourite of the bistros and wine lovers around the world.

The red wines of Rully have a seductive ruby colour. The nose in particular has a wonderful fragrance of violets and crushed raspberries. The tannins are usually supple. The finish, medium-long, is extremely pleasant and aromatic.

The village of Vougeot, which is located in the Côte de Nuits area of Burgundy, is most often associated with the 124-acre Grand Cru vineyard, Clos de Vougeot. There are about 40 other acres in this appelation, split between the village vineyards and several Premier Cru vineyards. The premier cru of Les Petits Vougeots and its subvineyard of Clos de la Perrière are thought to be the best. Most of the wine is red, made from Pinot Noir, although there's a small amount of white made from Chardonnay. These white wines are produced from the premier cru vineyard Le Clos Blanc and labeled Clos Blanc de Vougeot.

Chassagne-Montrachet lies at the southern end of the "Côte des Blancs," the four mile strip of the Côte de Beaune in which Puligny, Meursault and Blagny are also situated, collectively producing the most revered white wines of Burgundy. Chassagne-Montrachet covers 867 acres, of which 31 are occupied by the three great white grands crus of Le Montrachet and Bâtard-Montrachet, shared with Puligny-Montrachet, and Criots- Bâtard-Montrachet, situated solely in Chassagne-Montrachet. Of the balance, 392 acres are in seventeen premiers crus comprised of a total of 54 parcels, all of which are ranked premier cru both for red and white wines; these are augmented by another 243 acres of red vines under the Côte de Beaune-Villages appellation. Chassagne-Montrachet is the only commune of the Côte de Blancs in which red wine production surpasses that of white by a margin of just under three to two in a total average annual production of 10,484 hectolitres (116,490 cases).
